It’s hard to believe it’s already Monday – the weekend flew by for me. While it’s back to work for me today, I thought I’d share a recap of the weekend. It was a great one all things considered. I hope your weekend was fun too.


Earlier in the week I got a text from a really good friend that said she was going to be in town for the weekend. She lives a few hours north, so we typically only see each other a few times each year. We ended up getting together for dinner with her kids. We had a great time catching up, and I was even requested by the kids to do bedtime stories. I got to catch up with my friend and we ended up talking late into the night. I didn’t get home until after midnight. I’m hoping we’ll be able to get together once or twice again over the summer.

Apple Pastry

The only photo I took was just before I left of this apple pastry (I was clearly having too much time catching up to take any other photos). Since I was invited over for dinner, I thought that I should bring something with me to share. It ended up being a great choice because it was delicious.

Let me just say that late nights in my 30’s are so different than late nights in my 20’s. Although I only have one beer on Friday night, I was exhausted the next morning and felt out of sorts. I have no idea how I stayed out at the club til 2 am in university and was able to be productive the next day!



Despite feeling tired I was determined to get my grocery bought early on Saturday before the grocery store got crowded. I absolutely hate going on Saturday or Sunday afternoons when it’s packed, so I always try to go in the morning.

Brussels Sprouts

When I got home from shopping I thought I’d try a new recipe I found for the Brussels sprouts that I bought. I switched up the quantities a bit, but I used this balsamic and honey recipe as a guideline. They turned out amazing (though I roasted them for less time than the recipe said to, so be sure to check on them before the 20 minutes is over because you don’t want them to burn). I’ll definitely be making them again using this recipe.

I finished reading Final Girls (affiliate link) on Saturday afternoon. I didn’t see the ending coming at all, so now that I finished it, I can 100% recommend it. If you like thrillers that are quick to read because you can’t put them down, get your hands on this book. It’s been awhile since I’d last read a thriller that was this good.

I also got some blogging related stuff done on Saturday, including working on my 6 week workout plan that I’m planning on selling once it’s done. I’m so excited to be able to offer this. I spent the last day of my weekend getting some stuff done around the house including some cleaning. What is it exactly about a freshly cleaned room that makes me so much more productive when it comes to getting work done? I have no idea, but it’s awesome. I got a bunch of stuff organized for the week and even got some blog work done.

Chicken Brocolli Onion Peanut Sauce Brown Rice

I did some meal prep and made my lunches for the week. I decided to saute up some chicken breasts, broccoli, and onion with my absolute peanut sauce. I ended up serving it over brown rice and it was the perfect healthy meal and tasted so good.

My plan for the rest of the day (I’m writing this Sunday afternoon) is to start reading a new book, The Power of Habit (affiliate link) and make taco salads for dinner. The Power of Habit has some great reviews, so I’m hoping that I’ll like it as much as other people have. I’m hoping that the author really dives into the science behind habits, because I think it would be so interesting.
