Today I’m sharing a recap of my workouts and eats from the past week.

Workouts

As you can see below, even though they were just walks, I was still able to get in 5 days of exercise. I was taking it easy again this week due to a foot injury (read all the details here). I have one more week of taking it easy before I can get back to my usual workouts. I’m so looking forward to getting back to the gym. While I knew that workouts were a stress reliever for me, not being able to workout for the last week or two has shown me that to especially true right now.

Weekly Workouts Fitbit

Physical activity guidelines say that people should get at least 150 minutes of moderate to vigorous physical activity each week, and while I wouldn’t call walks moderate or vigorous, at least I’m right on target with the amount of time that I was active this week. I also plan to get in 5 workouts each week, and I’m glad that I was able to still do that despite having to take it easy this week.

Recipes

While I had originally planned to make another recipe this week, I ended up ordering pizza on Wednesday night instead. I ended up getting 3 or 4 meals out it, so I didn’t need to make the sun dried tomato pasta that I had had on my list. By the way, if you’re reheating pizza I would recommend doing it on the oven instead of the microwave. A year or two I started using the oven instead of the microwave a year or two ago for pizza and it makes such a big difference! It might take some extra time, but it’s so worth it.

Chicken fajitas with corn tortillas

I’ve made this Creamy Chicken Fajita Pasta recipe before, both in it’s entirety and just the first half to put in tortillas like I did this week. I used the recipe for seasoning the chicken. I then added a green bell pepper and onion and called it done. The corn tortillas were so good, and I don’t think I’ll go back to using flour ones for fajitas and tacos.

Beef stroganoff

I once again used this recipe for my beef stroganoff this week, The only modification I made was to add mushrooms, because it’s not really beef stroganoff without them, right? As usual I made egg noodles to serve the beef stroganoff over.
