As usual, thanks to Jen of Peas and Crayons and Arman of The Big Man’s World for hosting What I Ate Wednesday.
I haven’t had a chance to take a photo of a breakfast since I’ve been home, so I’m using a recycled photo. It’s essentially the same as what I ate yesterday for breakfast though. I started the day off with some vanilla (instead of the strawberry in the photo) yogurt, Oatmeal Crisp cereal, and an orange. The orange was particularly juicy and by the time I was finished eating it my hands were a sticky mess.
For lunch I decided on a sandwich, but I decided to change it up a bit. Instead of using regular bread, I decided to use one of the naan breads I had in the pantry. I topped the naan bread up with spinach, ham, tomatoes, mozzarella cheese, and honey mustard. The tomatoes were from the farmer’s market and were extra delicious. Tomatoes from the grocery store just don’t compare. I’m really looking forward to eating tomatoes from the garden in the backyard this summer. I really liked my sandwich with the naan bread. I’d definitely do it again.
Dinner was vegetarian curry. It comes frozen, so all I have to do is let it thaw in the fridge and then heat it up on the stove. It doesn’t get much easier than that. I cooked up some brown rice to go with it and I had a complete meal that wasn’t too hard to make. I think my favorite curry that I get from the farmer’s market is this one. It’s a yellow curry so it’s mild. It just has veggies in it, no meat (the usual choices are chicken and shrimp). I’m pretty sure I could eat this once a week and never get tired of it.
