As usual, thanks to Jen at Peas and Crayons and Meghan at Clean Eats Fast Feets for hosting What I Ate Wednesday.
Breakfast was a little different than my usual. Instead of cereal I went with a sesame bagel topped with peanut butter. I absolutely love when it’s gets melty and drippy. While it can get messy, there’s just something about it that I love. I also had a side of strawberries. They were actually pretty good considering it’s still spring and there’s no way they can be grown anywhere near here. I’m definitely jealous of places with warmer climates that can have fruits and veggies almost year round.
I had leftovers for lunch. I made Jen’s Broccoli bacon mac and cheeseΒ the night before. I’m planning on writing an entire post about it, but in the mean time I wanted to share that it’s amazingly delicious! Although the recipe called for three slices of bacon, I added an extra two more because my family is all about the bacon (and too be honest I’m glad I did). I mean really, you can’t go wrong with bacon. It was just as good as leftovers the day after as it was the night before.
I tried a new to me item from Heart’s Choices (they sell vegan Thai food). I decided to try their barbecued “pork”. I ended up really liking it. It’s now at the top of my list of favorite things to get from Heart’s Choices. It was super easy to heat up (all their food comes frozen) on the stove. I also added some sauteed stir fry veggies and brown rice to round out the meal. Seriously such a delicious meal that was ready to eat in no time at all. Not to mention it’s also pretty healthy. You can’t go wrong with dinners like that.

This looks like a fantastic day of eats to me. I’ve been meaning to try Jenn’s Mac & Cheese too. It sounds phenomenal and I love me some broccoli. Happy WIAW!

My hubby is crazy and doesn’t like bacon so I’ve never tried adding that to my mac. I do like to make mine Mexican style with salsa and fajita chicken strips!
