I have to start off by saying that this zucchini bread is one of the best I’ve ever made! It was absolutely amazing. You can find the recipe here from the Brown Eyed Baker. Although I didn’t have any zucchini from my garden this year to make zucchini bread, store bought zucchini worked just as well.
Before adding the zucchini to the wet ingredients you had to put it in a tea towel and squeeze out all the excess water. I was amazed at how much liquid there was in it! I thought it would be almost done, but more would keep coming out. If you’re concerned about the zucchini bread not being moist enough with getting rid of the excess liquid, don’t be. It was still really moist, but just not soggy.
The recipe was pretty basic and straight forward. Mix the wet ingredients together. Mix the dry ingredients together. Combine the two mixtures together. Once it was all together, the dried cranberries and walnuts were added. I’ll spare you a photo of the wet ingredients – it wasn’t very photogenic.
The last step before putting the zucchini bread into the oven was to sprinkle sugar on top. When it came out of the oven you couldn’t tell that I had put it on top, so next time I don’t think I would bother with that step.
As most baked goods do here in Calgary with the higher elevation, the zucchini bread took a bit longer than the recipe said to bake completely though. I had to add on 8 minutes to get a toothpick to come out dry.
Lining the loaf pan with parchment paper made taking it out of the pan so easy. I’m really glad that was suggested in the recipe. I can see how easy it would have been for it to stick in a corner and then break apart when trying to get it out if I hadn’t have used parchment paper.
I thought this zucchini bread was so pretty with the dried cranberries and walnuts in it. It was delicious on it’s own or with a little butter spread on it. I also had a suggestion that it might be good with some cream cheese frosting on it.
I will definitely be making this recipe again. In fact I think it might be my new go to recipe for zucchini bread. It was honestly that good. You can find the recipe here from the Brown Eyed Baker.
