I was browsing on Pinterest awhile ago, looking for zucchini recipes. When I found this one from Budget Savy Diva, I knew I had found one I wanted to make.
It was a pretty quick and simple recipe. You cut up the zucchini into large-ish chunks (I’m all about the technical terms), top each piece with olive oil, a few spices, and parmesan cheese.
Pop them in the oven for 15 minutes, and you have some amazingly delicious veggies.
I love the color they turned after being baked – they’re so pretty! I’ll definitely be making these again.
