Did you know today is Peanut Day? That obviously means that it should be celebrated with some tasty peanuts!
I decided to make some peanut butter and jam bars from Martha Stewart’s Cookies. I had made these once before, though it was a couple years ago. I did remember them being pretty tasty.
Whisking the flour mixture together was really quick and easy.
Creaming the wet ingredients together took a little more time but was fairly simple too.
Once they were both combined together I put two thirds of it into a baking dish for the crust. It took awhile to get it smoothed out and as flat as I could get it. It wasn’t perfect, but once it was made no one noticed that it was a little lumpy here and there.
The middle layer was strawberry jam. The cookbook said you could use any flavour, but I always use strawberry for PB and J sandwiches, so I did the same with this recipe.
I sprinkled the remaining peanut butter mixture on top of the jam layer, and then sprinkled chopped salted peanuts on top. It looked really tasty at this point – it was hard to resist not testing any!
By the time I took it out of the oven is smelled so amazing – the whole kitchen smelled like PB and J. It was awesome. After it was fully cooled a couple hours later I finally cut myself a piece and it was really good. Surprisingly it wasn’t as sweet as I thought it was going to be. For the recipe click here.
