Did you know today is National Peanut Butter Cookie Day? I thought I should celebrate, so over the weekend I made some peanut butter cookies. Whenever I eat one they remind me of childhood.
I used my usual recipe for them. I found it a few years ago on the Betty Crocker website, and since then I’ve made a few changes and adjustments to perfect them.
The dough has to be refrigerated at least two hours, so because I had soccer the night I started them, I left them in the fridge overnight until the next day when I had time to finish them.
They always turn out just a little chewy in the middle – I love that texture! The whole kitchen smells like peanut butter when I start to take the baked cookies out of the oven.
I think peanut butter cookies would have to be one of my favourite things to make with peanut butter. A very, very close second would be putting peanut butter on toast. I love when it melts. It’s so good!
